Sacramento Kings: The Buttermilk Fried Chicken Waffle Skewer

The Buttermilk Fried Chicken Waffle Skewer

As an arena in the Farm-to-Fork capital of the world, the Sacramento Kings Golden 1 Center is committed to utilizing the abundant resources in our region, demonstrating environmental leadership in sustainability. Golden 1 Center’s food charter focuses on efficiency, sustainability and positive economic impact, sourcing 90% of ingredients from a 150-mile radius of the arena. The Buttermilk Fried Chicken Waffle Skewer is a new food concept this season, sourced locally and providing a delicious treat for the best fans in the NBA.

Ingredients:

WAFFLE BATTER
2 cups all-purpose flour
1 ¾ cups milk
½ cup vegetable oil
1 tbsp. white sugar
4 tsp. baking powder
¼ tsp. salt
BUTTERMILK FRIED CHICKEN
2 lbs. chicken tenders
1 cup buttermilk
1 ½ tsp. salt
1 ½ cups all-purpose flour
1 tsp. salt
¾ tsp. ground black pepper
¾ tsp. garlic powder
3 cups vegetable oil for frying

Directions:

FOR THE WAFFLES:

  1. Preheat a waffle iron according to manufacturer’s  instructions
  2. Whisk eggs in a large bowl until light and fluffy. Add flour, milk, and vegetable oil and mix to combine. Whisk in sugar, then mix in baking powder and salt, being careful not to overmix.
  3. Spray the preheated waffle iron with nonstick spray. Pour batter on the hot waffle iron and cook until golden brown and the iron stops steaming, 3 to 5 minutes.

FOR THE CHICKEN:

  1. Place chicken tenders, buttermilk and salt in large sealable bag and refrigerate for at least 4 hours.
  2. In a large bowl mix flour, salt, ground pepper and garlic powder.
  3. Remove chicken tenders from buttermilk and toss into breading mixture.
  4. Place coated chicken tenders on a sheet tray.
  5. Add oil to a large pot and heat to 350°.
  6. Place several chicken tenders into the pan of oil.
  7. Cook chicken tenders until golden brown.
