LA Clippers: Beer Battered Baja Fish Tacos

Beer Battered Baja Fish Tacos

When it comes to LA eats, the city offers a triple threat of flavorful Mexican cuisine, fresh seafood and local produce born from a culturally diverse population and coastal to valley landscapes. Our Beer Battered Baja Fish Tacos recipe combines all the best LA has to offer into a savory slam dunk meal. Compliments of Chef Saul Martin of Martin’s Cocina y Cantina of Inglewood California, this recipe is perfect for Clippers watch parties or a delicious Taco Tuesday family meal.

Ingredients:

4 pieces of Sea Bass ( ½ lb. each) or use halibut, haddock, mahi-mahi, tilapia, or grouper.
1 package corn tortillas (or flour tortillas if preferred).
1 cup frying oil
1 12 oz. can Mexican beer (Corona, Dos Equis, or Modelo)
2 cups all-purpose flour
2 eggs
Salt and cayenne pepper for batter
Mayonnaise, milk, 1 can chipotle peppers for chipotle sauce
1 cup sours cream
½ head green and ½ head purple cabbage
3 limes for pico de gallo and garnish
1 bunch of cilantro for pico de gallo and garnish
2 tomatoes, 2 serrano jalapenos and red chopped onions for pico de gallo

Directions:

  1. Season fish with salt and seasoning.
  2. Make chipotle sauce: Blend mayonnaise, chipotle peppers, milk, salt, and pepper.
  3. Prepare batter: Mix Flour, salt, cayenne pepper, egg, and beer in a bowl.
  4. Fry: Heat oil to 350°, dip fish in batter fry for about 5 minutes each side.
  5. Warm tortillas and assemble tacos: warm tortillas, add fried fish, cabbage, pico de gallo. Top with chipotle sauce and sour cream
