Stuff's Blue Corn Taco

As part of celebrating Labor Day Weekend, we visited with Scott Skiles’ wife, Kim, to provide Magic fans with a pair of dishes to prepare for your personal cookouts this weekend. Enjoy!

2 cloves garlic, peel, keep whole but smash

1 butternut squash, peeled, seeded, and cut into chunks (or use frozen chunks)

2 large sweet potatoes, peeled and cut into chunks (or you can use frozen chunks)

1 large sweet sweet onion,  cut into chunks

½ tsp ground cinnamon (or more if you like cinnamon)

¼ tsp ground nutmeg (optional…leave out if you don’t like nutmeg)

(1) 13.5 oz can of full fat coconut milk ( you can find this in the international isle of the grocery store)

Heat olive oil in a large stock pot, sauté the garlic in the olive oil for about 30 seconds or until aromatic.  Add the squash, sweet potatoes, onion, cinnamon, nutmeg, 1 tsp salt, and a pinch of black pepper.  Sauté for 3 to 5 minutes, stirring frequently.  Add the broth and bring the soup to a boil, then turn the heat to simmer, partially covered, for about 20 minutes until the squash and potatoes are tender.

Remove the pot from the heat.  Blend the mixture with an immersion blender or in a standard high-speed blender, working in batches, until it’s completely smooth.

Return the soup to the burner set on low heat and stir in coconut milk.  Continue to heat soup on low flame, stirring well.  Season with salt and pepper.  Remember, your chicken broth was low sodium so you might need to add up to a tbsp. of sea salt.

1 ½ -2 lbs boneless skinless chicken thighs

2 Fennel bulbs, bulb only, cut in quarters (you can reserve fronds to garnish dish)

2 TBSP fennel seeds, ground (use a coffee grinder or mortar & pestle)

8 oz of mushrooms (type of mushroom-your choice)

Heat olive oil in a large sauté pan.  Sauté quartered fennel bulb for about 5 to 10 minutes on medium high heat.  Sprinkle with a little salt and pepper.

While sautéing fennel bulbs, pat chicken thighs dry with paper towels and sprinkle both sides of chicken with salt, pepper, and ground fennel.

Pull the fennel bulbs from the sauté pan and set aside.  In the same sauté pan, brown chicken thighs on each side.  Set chicken thighs aside.

Turn up the heat, add the wine, and scrape the bottom of the sauté pan. Add the butter.  Once melted, add the chicken broth.  Bring to a simmer. Add the mushrooms and let cook for about 2-3 minutes. Then add the fennel bulbs and chicken back to the sauté pan.   Simmer for about 10 to 12 minutes.  Add the cup of grapes and simmer for a few more minutes.  Garnish with fresh chopped fennel fronds.

You can serve this up in a pasta bowl by itself or serve over your favorite fun pasta:  bowtie, egg noodles, quinoa spaghetti .

As part of celebrating Labor Day Weekend, we visited with Elfrid Payton’s mother, Danielle, to provide Magic fans with a dish to make for your personal cookouts this weekend. Enjoy!

Once the roux is completed you can place it to the side.

Onions, bell peppers, parsley, and one or two cloves of garlic, dice these items real fine.

Chopped Ham (in squares), chopped bologna (in squares), smoke sausage (some people use hot sausage links), chicken gizzards(boiled until tender)

Once your meat and seasoning is cut up, place them in a pan and let them sauté together.

Fresh peeled and divine shrimp, dry shrimp, and cleaned crabs. After the seafood is clean, place in a pot and par boil.  The dry shrimp doesn’t need to be boiled.

Now it’s time for everything to start coming together:

 Your gravy should be a nice dark brown, if its not you need to make another roux and add a little more to your pot.

 Let this cook for 45 minutes to an hour then add your shrimp, crab and dry shrimp.

Now that everything is together, let it cook down for another 45 minutes to an hour.  Once its done cooking, turn off the fire and stir in a tablespoon of gumbo filé.

Have a pot of rice cooked and a bowl of Potato salad, and place you some hot rice in a bowl and add your gumbo.

Don’t put too much rice in the bowl because it will soak up the gravy.
