• 2 zucchini, sliced and halved • 1/2 red bell pepper, diced • 1 onion, sliced • 6 eggs • Salt, pepper, herbs to taste (also thyme, rosemary or basil can be used) • 1/3 cup shredded parmesan • 2 tablespoons full-fat plain Greek yogurt, half and half, or sour cream • 2 tablespoons chicken broth
