Brooklyn Nets: Jerk Chicken With Mango Salsa

Jerk Chicken With Mango Salsa

Barclays Center Executive Chef, Livio Velardo, worked closely with the Brooklyn Nets team nutritionist to create a flavorful, low calorie, post-game meal item for the players. Chef Livio developed the recipe with our Caribbean/West Indian cooks and team members to hone this menu item. It is inspired by the rich Caribbean/West Indian community that is a vital part of Brooklyn’s fabric. This recipe was a true team collaboration and a great point of pride for the entire culinary team involved.

Ingredients:

JERK CHICKEN
5 lbs. chicken wings
1 large peeled yellow onion
1 fluid oz. low sodium soy sauce
1 1/4 fluid oz. Worcestershire sauce
1 1/2 oz. ginger root
1 pinch ground ginger spice
1 pinch ground cinnamon spice
1/2 oz. granulate onion spice
1/2 oz. ground allspice spice
1.2 oz. fresh peeled garlic
1.2 oz. Caribbean jerk seasoning
2 oz. Caribbean jerk seasoning
2 oz. demi-glace concentrate sauce
MANGO CHUTNEY
5 ripe mangos
1/2 cup white distilled vinegar
1 small, diced red onion
2 large, fresh red bell peppers
1 oz. peeled ginger
2 oz. extra fine granulated sugar

Directions:

JERK CHICKEN:

  1. Clean and dry the chicken
  2. Puree ginger root, onion and soy in a blender
  3. Weigh out all dry and wet ingredients
  4. Season chicken with powdered ginger, cinnamon, onion and garlic powder, allspice and mix well
  5. Add in Worcestershire sauce and toss
  6. Add in wet jerk seasoning, garlic and puree. Mix well
  7. Place wings on a baking sheet and place in a 350 F oven for approximately 20 minutes
  8. Check for doneness and bake longer if necessary- internal temperature should be 165 F

MANGO CHUTNEY:

  1. Place all ingredients in a large mixing bowl
  2. Mix thoroughly
  3. Let salsa sit for 1-2 hours for best taste
  4. Garnish with fresh cilantro to taste
