Chef Talde: Lemongrass Chicken Fried Brown Rice

Serving: 4 portions

Ingredients

1 Lean ground chicken breast diced into pcs
2 tablespoons oyster sauce
2 tablespoons honey
1 tablespoon fish sauce
tablespoon black pepper
2 stacks minced fine lemongrass

Method: Mix all ingredients and marinate for 2-3 hours

3 pcs whole egg
3 tablespoons scallion (cut into rounds)
1 clove minced garlic
1-1/2 cups brown rice
1-1/2 cups water
cups olive oil


Method for rice: Add rice and water into a pot and put on stove turn to high bring to boil the cover with lid and bring to simmer, cook for 45 minutes till done

Method: in a skillet add oil and turn to medium, add chicken and brown on all side and then turn to med-low to cook through, when chicken is done remove and hold, in the same pan add 2 tablespoons oil and add scallions and garlic, then add egg, cook through and add brown rice, turning heat to high and toss rice. add cooked chicken back to rice. Season salt and pepper to finish
