Beet, Apple and Kale Salad

Ingredients

  • 10 beets, washed
  • 3 cups water
  • 2 apples, cored, diced and cubed
  • ¼ cup chickpeas, drained and rinsed
  • 2 Tbsp. olive oil
  • 2 Tbsp. balsamic vinegar
  • ¼ cup fresh basil, finely chopped
  • ¼ cup fresh cilantro, finely chopped
  • Pinch of sea salt
  • Pinch of black pepper
  • 15 large kale leaves, coarsely chopped
  • ¼ cup dried cranberries


Directions

  • In a medium sized sauce pan, combine beets and water; bring to a boil. Cover and reduce to medium-low heat.
  • Cook for 45 minutes or until beets are tender.
  • Remove beets from water and set aside to cool.
  • Peel and discard beet skins.
  • In a large mixing bowl, combine oil, vinegar, basil, cilantro, sea salt and pepper; whisk until well combined.
  • Add apples, beets and chickpeas; toss gently to coat with dressing.
  • Meanwhile, steam kale leaves in the microwave for 1-2 minutes or over stove top for approximately 4-5 minutes until they turn a bright green hue and are soft in texture.
  • Serve each plate with cooked kale leaves, top with beet, apple and chickpea mixture.
  • Sprinkle with dried cranberries.
  • Enjoy!


Springtime Seed Cookies

Ingredients

  • 1 cup whole wheat flour
  • ¼ tsp. sea salt
  • 1/3 cup stevia or sugar substitute
  • 1 tsp. baking powder
  • ¼ cup pumpkin seeds
  • ¼ cup sunflower seeds
  • ¼ cup ground flax seeds
  • ¼ cup dried cherries, chopped
  • 1 egg or egg substitute
  • ¼ ripe avocado, softened and mashed
  • 1 Tbsp. honey or agave nectar
  • 1 tsp. fresh lemon juice
  • ¼ tsp. fresh lemon zest
  • 1 tsp. almond extract


Directions

  • Preheat oven to 350 degrees.
  • Line a baking sheet with wax paper.
  • Combine all dry ingredients in a large mixing bowl.
  • Combine all wet ingredients in a large mixing bowl.
  • Combine the wet ingredients with the dry ingredients; mix well.
  • Spoon batter into balls and drop onto wax paper.
  • Cook for 10-12 minutes or until cookies are golden brown.
  • Enjoy!
