Cleveland Cavaliers Joey Graham's Creamy Chicken Pasta


Every athlete should maintain a healthy diet to achieve overall well-being. On game days, a diet high in carbohydrates is a great way for players to get all the nutrients, as well as satisfaction, without over-eating. Pasta is a great choice for lunch or dinner!

Creamy Chicken Pasta
  • 3 chicken breasts
  • 1 tbsp olive oil
  • 1 clove of garlic, finely chopped
  • 2 cups of 35% cream
  • ¼ cup, cold butter
  • ¼ cup, grated parmesan cheese
  • Salt and pepper
  • Whole wheat pasta
  • Fresh parsley, chopped
  • Glaze the chicken with olive oil and season with salt and pepper. Grill and set aside.
  • Heat a large saucepan over high heat and add in 1 tablespoon of butter and sauté garlic until clear. Slowly pour cream into the pan. As the cream comes to a boil, reduce the heat to medium and continue to boil until it is reduced by half.
  • In the meantime, cook pasta according to package directions and drain when cooked.
  • When the cream is reduced, remove it from the heat and add 1 tablespoon of butter at a time and whisk it in. The cream should thicken and turn glossy. Add the cheese and hot pasta to the cream. Season with salt and pepper and garnish with chopped, fresh parsley.
  • Top pasta with sliced grilled chicken and serve.
