Chef Ferraro: Turkey Burger with the Works, Baked Garlic & Herbed Sweet Potato Fries

14 ounces lean ground turkey
3 tablespoons extra virgin olive oil
2 garlic clove (minced)
4 sprigs thyme (chopped)
1 sprigs rosemary (chopped)
2 sprigs Italian parsley (chopped)
bunch chives (chopped)
1 egg (whole)
cup whole wheat bread crumbs (lightly toasted)
1 shallots (minced)
teaspoon sriracha
teaspoon dijion mustard
1/8 cup soy milk
2 whole wheat buns
4 strips turkey bacon (precooked)
1 ripe tomato (sliced)
4 leaves bibb lettuce
1 red onion (thinly sliced)
2 slices reduced fat cheddar cheese
1 large sweet potato


1. With the skin on, cut sweet potato into wedges.

2. Chop together 2 sprigs thyme, 1 sprig rosemary, 1 garlic clove, and 1 shallot.

3. Combine with olive oil and mix with potatoes.

4. Season with salt and pepper; lay a single layer flat on baking sheet.

5. Place into oven at 350⁰F for 25 minutes, until tender.

6. Add 1 tablespoon olive oil into pan over medium heat and cook remaining garlic and shallot for 1 minutes.

7. Combine in the rest of the herbs and cook for another minute.

8. In a bowl, combine turkey, breadcrumbs, sriracha, egg, mustard, soy milk and the herb‐garlic mixture.

9. Separate meat into two burger patties, place onto non‐stick baking sheet, and into oven at 350⁰F for 30 minutes (patties should have an internal temperature of 165⁰F).

10. Add remaining olive oil in pan over medium heat and cook onions with a pinch of salt and pepper for 5 minutes.

11. Reduce flame to low, allow onions to cook for 20‐30 minutes until caramelized.

12. Toast burger buns; then layer with burger patty, onion, cheese, lettuce, tomato, and bacon.

13. Serve burger with fries.
