Chef Chavez: Achiote Paste for Red Snapper Pibil

Ingredients

1 package (15 oz.) Achiote Paste
Fresh Orange Juice (from 1/2 an orange)

Directions

1. Place achiote paste into a small mixing bowl.

2. Add fresh orange juice and mix in by hand (using gloves) until thoroughly and evenly blended.

3. Transfer to the proper storage container.

4. Label and store at the sauté/grill station.
