Chef Chavez: Mashed Sweet Potatoes


2 Sweet Potatoes
Canola/Olive Oil Blend (as needed)
3/4 cup Heavy Whipping Cream (HOT!)
1 to 2 TBS. Butter (Melted)
1/2 tsp. Kosher Salt
Pinch Cinnamon
Pinch Ground Cloves
2 oz. Crumbled Cotija Cheese


1. Wash sweet potatoes and oil lightly with canola/olive oil blend.

2. Wrap each potato in aluminum foil.

3. Place on a large sweet pan and place into the oven.

4. Bake at 350 for about 2 hours until tender.

5. Remove from the oven - remove foil and remove the skins from the potatoes and place into a large mixing bowl.

6. Mash potatoes well with a wire whip.

7. Add remaining ingredients and mash together until smooth.

8. Transfer to a proper insert pan or storage container.

9. Place on the kitchen line for service or cover, label, date and store at the proper place in the walk-in.
