Chef Batali: Jambalaya Turkey Burger

Servings: 4 Burgers
1 pound ground turkey
2 spicy smoked chicken sausages (about 3 ounces each), cut into ¼-inch pieces
¼ cup finely chopped onion
4-ounce jar roasted red peppers, drained and feinly chopped
3 tablespoons finely chopped garlic
2 tablespoons chili powder
½ teaspoon finely chopped jalapeno pepper (optional)
½ teaspoon dried thyme
Freshly ground black pepper
Unflavored spray oil for grilling
8 slices while bread or 4 hamburger buns
Red onion slices
Place the ground turkey in a medium bowl. Add the remaining ingredients (except the spray oil) and gently mix together until just combined. Shape the mixture into four ¾-inch-thick-by-4-inch patties (don’t fret about how uniform they are). Put the patties on a flat platter, cover, and keep in a refrigerator or ice-filled cooler for 1 hour or up to 12 hours.
Prepare enough coals for a medium-hot fire or set s gas grill to medium-high.
Just before cooking, remove the patties from the refrigerator or cooler and liberally spray one side with unflavored oil. Grill the burgers with the oil. Grill the burgers, sprayed sides down, over medium0hgih heat for 6 to 7 minutes.
Spray the top sides of the burgers with the oil, being careful not to spray into the coals. Flip the burgers and grill until they are cooked through and no loner pink in the center, 6 to 7 minutes more.
Put each burger in a bun and serve with lettuce, onion, and salsa.
