A Recipe from Cleveland’s Own Michael Symon, Winner of ’The Next Iron Chef’ on the Food Network

Ahmaad and Moondog paid a visit to Cleveland’s most recent champion, Chef Michael Symon at Lola on East Fourth in Downtown Cleveland. Chef Symon finished first in the recent Food Network program, The Next Iron Chef to become one of five Chefs on the popular Food Network Show Iron Chef.

The LeBron of the Culinary World has two restaurants, Lola in Cleveland (2058 East Fourth, Cleveland) and Lolita in Tremont (900 Literary Rd, Tremont). Check out the website, www.lolabistro.com. Symon, a Cleveland native and Cavalier fan, is widely regarded as one of the world’s top Chefs.

Chef Symon’s Holiday Flank Steak with Salsa Verde:

3 lbs hanger steak

Clean hanger steak by taking off silver skin.

Cut into 8 oz portions and place in marinade.

Hanger steak marinade

2 cups red wine vinegar

5 springs of oregano

3 cloves garlic, chopped

4 shallots, chopped

2 Tbs coriander

4 cups blended oil

Combine all and pour over hanger steak.

Let marinade overnight.

Grill to desired doneness.

Medium would be about 5 minutes per side.

Slice against grain and serve with salsa verde.

Salsa Verde with tomatoes

4 bunches parsley

1/2 Tbs chili flakes

2 lemons

3 cups extra virgin olive oil

2 large tomatoes

4 cloves garlic

4 shallots

Wash and dry parsley.

Rough chop parsley, garlic and shallots.

In a large mixing bowl combine juice from lemons and olive oil.

Whisk together.

Add chili flakes and whisk again, toss with tomatoes and serve with hanger steak.
